Air Fryer Cauliflower

Ingredients

  • 1 cauliflower head

  • 2 tsp olive oil

  • 2 tbsp parmesan cheese

  • 1 tsp medium curry powder

  • 125g natural yoghurt

  • 1 tbsp lemon juice

  • ¼ tsp hot or medium chilli powder

  • 1 tbsp freshly chopped parsley

Directions

  • Step 1

    Cut the cauliflower into even sized florets, then cut the stalk into 2cm circles.

  • Step 2

    Mix the oil, cheese and curry powder in a large bowl then add the cauliflower and toss to coat.

  • Step 3

    Spread the cauliflower over the base of the air fryer basket in a single layer and cook for 8 mins until golden brown, you may need to do this in batches.

  • Step 4

    Meanwhile, mix the yoghurt and lemon juice in a small serving bowl and sprinkle with a pinch of chilli powder, or more if you like.

  • Step 5

    Tip the cauliflower onto a serving plate, sprinkle with parsley and serve with yoghurt dip.
