Mince Pie Brownies

Ingredients

  • 100 g of dried mixed fruit

  • 100 g of sultanas

  • 100 g of raisins

  • 50 g of currants

  • 50 g of chopped dates

  • 50 g of dried cranberries

  • 1 granny smith apple, coarsely grated

  • 1 orange, zested and juiced

  • 50 ml of brandy

  • 50 ml of apple juice

  • 100 g of dark chocolate, broken into pieces

  • 60 g of unsalted butter, melted

  • 100 g of dark brown soft sugar

  • 2 eggs

  • 1 tsp of mixed spice

  • 50 g of ground almonds

  • 50 g of plain flour

Method

  • Step 1

    Preheat the oven to 180°C/160°C fan/gas 4. Line a 30cm x 20cm brownie tin with baking paper.

  • Step 2

    In a large bowl, combine the mixed fruit, sultanas, raisins, currants, dates, cranberries, grated apple, orange zest and juice, brandy and apple juice and leave to infuse while you make the batter.

  • Step 3

    In a small pan, bring 200ml water up to a gentle simmer. Place a larger glass or metal bowl over the pan, ensuring the base doesn’t touch the water.

  • Step 4

    Add the dark chocolate to the bowl and leave it to melt. Once melted, remove the bowl and set aside.

  • Step 5

    In another large bowl using electric beaters or a standing mixer, whisk together the melted butter and sugar until well combined.

  • Step 6

    Add the eggs one at a time, whisking well in between each addition, until the batter is thick and glossy. Add in the melted chocolate and gently mix by hand until just combined.
