Chicken Burger with Satay Sauce and Sauteed Sprouts

Ingredients

  • 4 chicken breasts

  • 4 brioche burger buns

  • 200 g of crunchy peanut butter, (for the satay sauce)

  • 1 tbsp of soft brown sugar, (for the satay sauce) or you can use palm sugar

  • 160 ml of coconut cream, (for the satay sauce)

  • 1 lime, (for the satay sauce), zest and juice

  • 1 pack of smoked streaky bacon, optional

  • 4 tbsp of fig chutney, optional

  • 1 avocado, optional, cut into slices

  • 3 tbsp of olive oil

  • 0.5 red chilli, (for the satay sauce)seeds removed

  • 1 tbsp of soy sauce, (for the satay sauce) or you can use tamari

  • 28 g of fresh coriander, (for the satay sauce)

  • 4 cheddar cheese slices, optional

  • 300 g of brussels sprouts, shredded

Method

  • Step 1

    Drizzle 1tbsp of oil over the chicken breast fillets and season. Place onto a non-stick baking tray and cook for 20-25 mins, depending on the size of your fillets.

  • Step 2

    Meanwhile, blitz all the satay ingredients in a food processor.

  • Step 3

    In a large non-stick pan, heat the remaining oil on high and sauté the sprouts for 3 mins, stirring, then season and set aside.

  • Step 4

    If you are using bacon, grill until nice and crispy, then set aside.

  • Step 5

    Toast your burger buns until golden

  • Step 6

    Once the chicken is cooked, assemble your burgers: spoon fig chutney on the bottom, followed by the sprouts and chicken. Add cheese and a good dollop of satay sauce followed by any other toppings you may have chosen, pop the top bun on with a skewer to hold it all together and tuck in!
