Pork and Apple Burgers

Ingredients

  • 500 g of frozen sweet potato fries

  • 500 g of pork mince

  • 0.5 onion, finely chopped

  • 2 garlic cloves, crushed or grated

  • 1 pink lady apple, peeled, finely chopped

  • 15 g of sage, leaves only, finely chopped

  • 1 tsp of english mustard

  • 0.5 tsp of vegetable oil

  • 1 tsp of sea salt

  • 0.5 coarse ground black pepper

  • 4 slices of emmental cheese

  • 2 tbsp of mayonnaise

  • 2 tbsp of bbq sauce

  • 4 brioche buns

  • 100 g of wild rocket

  • 0.5 red onion, cut into ½cm-thick rings

Method

  • Step 1

    Preheat the oven and bake the sweet potato fries according to the pack. Meanwhile, prepare the burger patties.

  • Step 2

    In a large mixing bowl, add the pork mince, onion, garlic, apple, sage, mustard, oil, 1 tsp sea salt and ½ tsp coarsely ground black pepper and mix together thoroughly using your hands. Mould the mixture into 4 patties and then, in a very hot griddle or frying pan, fry the patties over a medium-high heat for 8-10 mins then flip them over, add a slice of emmental cheese on top of each and cook for a further 6-8 mins until the cheese has melted. Set aside to keep warm.

  • Step 3

    In a small bowl, mix the mayonnaise and BBQ sauce together well, then spoon a little of the sauce onto the top and bottom halves of the buns.

  • Step 4

    Next, add a handful of rocket to the bottom of each bun followed by a burger patty, a couple of red onion rings and the top of the bun. Serve with sweet potato fries.
