Chipotle Steak and Chips
Ingredients
400g maris piper potatoes, peeled and cut into 1cm chips
5 tsp groundnut oil, plus extra to drizzle
50g butter, softened
5 sundried tomatoes in oil, drained
1½ tsp chipotle chilli paste, plus 2 tsp (optional)
50g mayonnaise
2 tsp Cajun seasoning
1 Hawksmoor 35 day-aged prime rib
2 garlic cloves, peeled
1 green salad, to serve

Method
Step 1
Heat the oven to 220°C/ 200°C fan/ gas 7. Tip the chips into a bowl of cold water then, using your hands, mix well and leave for 10 mins.
Step 2
Drain the chips and pat dry on kitchen towel. Tip into a large non-stick roasting tin, pour over 3 tsp groundnut oil and plenty of salt then toss to coat. Roast for 20 mins.
Step 3
Meanwhile, make a tomato and chilli butter. Tip the butter, sundried tomatoes and 1 tsp chipotle chilli paste into a mini food processor and whizz until smooth. Taste and add 2 tsp more paste if you want this with a kick.
Step 4
To make the chipotle mayonnaise, mix together with the remaining ½ tsp of chipotle chilli paste until smooth. If you want more spice, add more chipotle paste.
Step 5
Reduce the oven temperature to 200°C/ 180°C fan/ gas 6. Remove the chips from the oven and toss in the Cajun seasoning. Set to one side to stay warm in the roasting dish. Once the oven is cooler, you can pop t

Pat the steak dry with kitchen towel and then season all over with plenty of salt. Rub a little groundnut oil all over and pop into the oven on a foil lined baking sheet for 8 mins each side.

After 16 mins remove the steak from the oven and set aside.
Step 8
Heat a non-stick frying pan over a high heat. Pour in the remaining 2 tsp groundnut oil and heat until shimmering. Add the steak to the pan and sear for 2-3 mins on each side, until golden. Reduce the heat a little then add the flavoured butter and garlic, as it melts baste the steak with the garlic-infused butter for 1 min. Remove from the heat and transfer the steak to a warm dish and rest for 10 mins.

After 10 mins, pour any steak resting juices into the frying pan with the butter and season.
Step 10
Slice the steak, divide between 2 plates with the chips, mayonnaise and green salad. Pour over the buttery sauce from the pan and serve.
