Steak Diane

Ingredients

  • 4 sirloin steaks, fat trimmed off

  • 1 tbsp of oil, to fry

  • 50 ml of brandy

  • 1 onion, finely sliced

  • 125 g of chestnut mushrooms, sliced

  • 50 g of butter, 25g for cooking and 25g to sautee the greens

  • 1 clove of clove garlic, sliced

  • 30 ml of worcestershire sauce

  • 1 tbsp of dijon mustard

  • 200 ml of double cream

  • 1 packet of chips, to serve

  • 1 greens, to serve

Method

  • Step 1

    Put the steaks between cling film and bash out a bit. Rub each steak with oil, season well and fry for 1 minute on each side. Remove from the pan and keep warm.

  • Step 2

    Add a drop more oil to the pan and fry the onion and garlic until soft (about 5-6 minutes).

  • Step 3

    Add the mushrooms and butter to the pan and cook for another 5 minutes.

  • Step 4

    Add the mustard and stir well, then add a good glug of brandy and let it flame. When the flames die down, add the cream and cook until thickened (about 4-5 minutes).

  • Step 5

    Sautée the greens in butter, and season well.

  • Step 6

    Serve the steak with chips and greens.
