Mushroom Fried Rice
Ingredients
1 (300g) pack M&S Frozen Mushroom Medley
1 tbsp groundnut oil
1 (250g) pack microwave jasmine rice
2 eggs
3 salad onions, finely sliced
2 dollops Poon’s London Wo Sauce
Directions
Step 1
Heat a dry wok over high heat, add the mushrooms and cook until all the water has evaporated.
Step 2
Add the oil and stir-fry for a couple of mins to colour the mushrooms. Tip in the rice and toss until all the grains are coated in the oil.
Step 3
Make a well in the centre of the mushrooms and rice, crack in the eggs and scramble. Once the egg begins to clump together, add the salad onions and bring in the rice from around the edge of the wok; stir-fry for a couple of mins.
Step 4
Season to taste, then divide between bowls and serve topped with a dollop of Wo Sauce.
