One-Pan Prawn Orzo

Ingredients

  • 1 tbsp olive oil

  • 2 red onions, finely chopped

  • 2 garlic cloves, crushed

  • 2 x 400g tins plum tomatoes, we used Ocado

  • 500g orzo, we used Rummo

  • 400g raw prawns, we used Tiger Delight Large Raw Peeled King Prawns

  • 200g feta, crumbled

  • 15g flat-leaf parsley, roughly chopped

Directions

  • Step 1

    Place a large pan over a medium-high heat. Add the oil and the red onions and cook for 5 mins until softened. Add the garlic and cook for 1 min more.

  • Step 2

    Tip in the plum tomatoes, 800ml water, the orzo and the prawns. Bring to a boil. Season with salt and pepper.

  • Step 3

    Reduce to a simmer for 15 mins, stirring frequently like a risotto, until the orzo is cooked, the prawns are pink and cooked through and most of the liquid has been absorbed. You might need to break the plum tomatoes down with the back of a spoon.

  • Step 4

    Divide the orzo between six airtight containers. Top with the crumbled feta and the flat-leaf parsley, to garnish.
