Glazed Pork Satay Skewers

Ingredients

  • 600 g of pork fillet

  • 2 tsp of peanut butter

  • 2 tbsp of oil

  • 3 limes

  • 2 tbsp of hellmann's real mayonnaise

  • 1 tbsp of runny honey

  • 2 tbsp of reduced salt soy sauce, for the marinade, plus 2 tsp for the satay

  • 150 ml of reduced fat coconut milk

  • 1 tsp of red curry paste

Method

  • Step 1

    Cut the pork fillet into bite sized chunks, then place in a medium sized bowl, add the oil and 2 tbsp of soy sauce. Leave to marinade in the fridge for a couple of hours.

  • Step 2

    In a small saucepan, heat the coconut milk with the curry paste and cook for a couple of minutes. Then stir in the honey, peanut butter and 2 tsp of soy sauce.

  • Step 3

    Remove from the heat and leave to cool. Add the mayonnaise and lime juice, and mix together to make the satay sauce.

  • Step 4

    Thread the pork onto 8 medium sized skewers.

  • Step 5

    Grill the pork skewers for 3-4 minutes on each side or until the pork feels firm to the touch and there is no sign of blood.

  • Step 6

    Brush the pork with a little of the satay sauce, and cook for a further 30 seconds on each side, or until the sauce starts to caramelise.

  • Step 7

    Serve the pork with the rest of the satay sauce and lime wedges.
