Red Leicester Burgers with Tomato and Onion Relish

Ingredients

  • 1 garlic clove, crushed

  • 4 spring onions, finely chopped

  • 1 large carrot, grated

  • 2 tsp of mixed dried herbs

  • 3 tbsp of fresh parsley

  • 1 red onion, thinly sliced

  • 2 tomatoes, sliced

  • 1 tbsp of red wine vinegar

  • 2 tsp of wholegrain mustard

  • 4 handfuls of mixed salad leaves

  • 1 pinch of salt, to season

  • 500 g of lean minced pork

  • 4 burger buns, each sliced in half

  • 100 g of red leicester cheese, sliced

  • 1 pinch of pepper, to season

Method

  • Step 1

    Mix together the mince, garlic, spring onions, carrot, dried herbs and fresh herbs. Season well, then shape into 4 burgers. Cover and chill until ready to cook.

  • Step 2

    To make the tomato and onion relish, put the onions, tomatoes, vinegar and mustard into a bowl. Season, toss together and leave to marinate while cooking the burgers.

  • Step 3

    Preheat the chat-grill pan, grill or barbecue. Cook the burgers for 6-7 minutes on each side.

  • Step 4

    Lightly toast the burger buns on the cut sides. Top with some salad leaves, then place a burger on top of each one. Finish off with slices of Red Leicester cheese and serve with tomato and onion relish.

  • Step 5

    Cook's tip: for a blue cheese burger, top with slices of Stilton.
