Barbecued Steak with Peach Relish

Ingredients

  • 4 beef steaks, sirloin, rump or rib-eye

  • 2 cloves of garlic, peeled and finely chopped (for the spicy marinade)

  • 1 lemon, zested and juiced (for the spicy marinade)

  • 0.25 tsp of chilli flakes, optional (for the spicy marinade)

  • 2 bay leaves, crushed (for the spicy marinade)

  • 1 tbsp of fresh thyme, leaves (for the spicy marinade)

  • 15 ml of sunflower oil, (for the spicy marinade)

  • 2 ripe peaches, stoned and diced (for the peach relish)

  • 30 ml of extra virgin olive oil, (for the peach relish)

  • 1 lime, juice (for the peach relish)

  • 1 orange, juice (for the peach relish)

  • 0.5 red onion, peeled and finely diced (for the peach relish)

  • 1 dash of soy sauce, (for the peach relish)

Method

  • Step 1

    Mix the marinade ingredients together. Place the steaks in a shallow dish, spoon over the marinade mixture and coat on both sides. Cover and marinate in the refrigerator for up to 2 hours.

  • Step 2

    To prepare the relish, place all the ingredients into a medium bowl and toss gently, cover and set aside in a cool place (but not in the refrigerator).

  • Step 3

    Cook the steaks according to your preference on a prepared barbecue or preheated grill.

  • Step 4

    Serve the steaks with the relish, a side salad and crusty bread.
