Chickpea Smash

Ingredients

  • 2 x 400g tins chickpeas, rinsed and drained

  • 75g soya yoghurt, we used Alpro

  • 1 tsp Dijon mustard

  • 1 red onion, finely chopped

  • 1 tbsp capers, roughly chopped, plus 2tbsp brine

  • 1 small handful fresh parsley, finely chopped

  • 6 wholemeal brown pitta breads, we used M&S Wholemeal Pittas

  • 6 tbsp pesto, we used M&S Green Pesto

  • 3 tomatoes, finely sliced

  • 2 avocados, sliced

6 servings — 1 filled pitta each

Method

  • Step 1

    In a bowl, roughly mash the chickpeas with a fork or masher. Stir in the yoghurt, mustard, red onion, capers, brine, parsley. Season well with salt and pepper.

  • Step 2

    Toast the pittas until warm and crisp.

  • Step 3

    Spread the pesto over the base of each pitta. Top with the smashed chickpeas, tomato slices and avocado. Serve immediately.
